Healthy Living with a Little Help From a “Delightful” Bread

In February of 2014 I was diagnosed with Type 2 Diabetes. I was tired, overweight and had out of control diabetes. I knew nothing about the disease, what caused it or how to treat it. After attending nutritional classes and meeting privately with a dietitian, I knew my lifestyle had to change. Number one, I had to change how I ate and what I ate and bring my high blood sugar down, along with some help with medication. Number two, I had to lose weight. Thanks to Sara Lee® for sponsoring this post so that I can share my experience with you.

I had no idea, until my nutritional classes, that carbs were the ‘enemy’. How was I going to cut down on my faves of pasta, potatoes and bread? My dietitian gave a limit of 50 grams of carbs per meal. Thanks to Sara Lee®’s Delightful Breads at only 45 Calories I found I could still enjoy my sandwiches and toast. I experimented with lots of different brands and types of bread but I found the taste I was looking for in Sara Lee®’s Delightful Breads. Not only is it only 45 calories, it has only 17 grams of carbohydrates for two slices which is very important to a diabetic. Serving size is the first thing that diabetics look for on a nutritional label. An added bonus is that the bread also has 5 grams of fiber. When the fiber is 5 grams or more you divide the fiber by two and subtract from your total carb count. That would make the bread 15 grams of carbs! For a diabetic that is a delight! It is also great for a heart-healthy diet and the bread contains no artificial colors or flavors, and no high fructose corn syrup.

From the day I was diagnosed with diabetes I decided to make a change and I started that day. I started eating healthy by eating smaller portions and concentrated on eating fruits, vegetables, chicken, fish, nuts, beans. I am also realistic and realize that I cannot eat the same thing every meal of every day. I still enjoy my sandwich for lunch with some fruit on the side. The difference is now I eat a peanut butter and jelly sandwich with natural peanut butter and sugar free jelly on Sara Lee®’s Delightful Breads. On some days I will eat sliced turkey that I roasted in the oven instead of deli meat. I also love a chicken salad that I improvised to be less carb loaded, but still satisfying. In the nine months since I was diagnosed with diabetes, I succeeded in my number one priority to bring down my sugar level that even shocked my doctor. I now have my diabetes managed but something else happened in my quest. I lost 65 pounds and brought down my bad cholesterol and brought up my good.

Low Carb Chicken Salad Sandwich
Ingredients
  • 2 cups grilled chicken breast cubed
  • 1 rib celery diced
  • 1 green onion diced
  • 1 cup red seedless grapes halved
  • 1/2 cup chopped walnuts
  • 1/2 cup diced avocado
  • 1/4 cup mayo
  • 3/4 cup Greek yogurt
  • 1/4 tsp pepper
  • 1/4 tsp salt
Instructions
  1. Mix first six ingredients in a bowl.
  2. In separate bowl mix mayo and Greek yogurt and seasonings.
  3. Pour over chicken mixture and stir well.
  4. Chill.
  5. Serve on Sara Lee® Delightful Oatmeal bread with a tomato slice and leaf lettuce.

    You look amazing for 63! My mom was diagnosed with diabetes almost 40 years ago and is now on both the pills and injectables. I know she has cut back on her carbs and only eat whole wheat bread now but maybe if she had this it might have helped a lot more. I’m always worrying that since it has less it might not taste as great but I think I’m going to try this. I do need to start eating a lot healthier.

    You did so well on loosing weight and you look stunning. My hubby is pre diabetic.45 calories is a great way to be able to some carbs in your diet and still keep the calorie count low if your watching your calorie count intake. I watch my calorie intake and I struggle with loosing weight. Great review. I love the added touch of the recipe

    I love sandwiches and they are great for work days. Satisfying yet healthy (with the right ingredients). I will look for the bread. Some lean turkey, mustard (lots!) and lettuce and I’m pretty satisfied, so this will work well for me. Thanks!
