One of my family’s favorite things to eat during the holiday season are all kinds of desserts. Yes, we have a collective sweet tooth and we own it. Although cookies and candy are what first come to mind when you think holiday desserts, there are many other options out there. Plus, variety is the spice of life. One option other than cookies is rice pudding. It is creamy and sweet and pretty darn perfect. It also has to be one of the easiest desserts to make. Festive Blueberry Rice Pudding
In a medium saucepan, follow the directions on the Minute Rice packaging to cook 1 cup of rice.
After the rice is cooked, in the same medium saucepan, stir together the rest of the ingredients and bring the mixture to a simmer. Let the mixture cook for 7 minutes stirring frequently until the pudding is thick and creamy in texture.
Garnish with extra blueberries and dried cranberries.
- -1 cup of Minute Rice
- -1 cup milk
- -1 cup water
- -1/3 cup sugar
- -1/4 cup blueberries with extra for garnish
- -1/4 cup dried cranberries with extra for garnish
- -2 teaspoons cinnamon
- -Dash of nutmeg
