Easy Pumpkin Chocolate Chip Cookies

I have a confession to make.  I am a lazy baker.  I feel so much better now that you all know this about me.  You still love me, right?  I knew you would!  I recently sent my husband to the store to get snacks to take to a friends house for our weekly Bronco Football gathering.  He chose Halloween sugar cookies, which were fine, but he made the huge mistake of confessing that he had seen Pumpkin Chocolate Chip cookies in the bakery and he passed them up.  Um, HELLO!  What was he thinking???  I immediately demanded that he return to the store to buy said cookies, but he just laughed at me.  By the next time I made it to the store and looked for them, they were all gone, and I was left with a cookie craving that I couldn’t fulfill.  I was going to have to (gasp!) bake my own!  I looked at a few recipes but like I said, I’m a lazy baker.  I like to buy pre-made mix and just add my milk and eggs and… Voila! I have instant cookies! This recipe is the next best thing. You can’t beat easy and delicious!

 

Pumpkin Chocolate Chip Cookies

1 box cake mix – any flavor (I used Spiced Cake Mix)

1 15oz can Pure Pumpkin (not pumpkin pie filling)

1 bag of chocolate chips

Pre-heat oven to 350

Bake time: 20-25 minutes

In a medium bowl, mix your cake mix and your pumpkin together with a small hand mixer (you’ll get a better consistency than trying to hand stir it).  

 

Add chocolate chips and mix again

Drop your cookies on the cookie tray.  Because these are made with a cake mix, the cookies won’t spread while cooking and for the most part retain the shape that they were dropped in.  You could get crazy and put them in fun shapes!

 

Bake at 350 for 20-25 minutes.  The smaller the cookie, the less baking time.  Larger cookies will require the full 25 minutes.

My kids, and even my non-pumpkin loving husband, loved these super easy cookies.  Enjoy!

    Now even I could make these! Not only do I tend to be a lazy baker (you are not alone) but I am not a very good baker either. I do love PUMPKIN anything and these sound super delicious!

    These remind me of years ago when I made my first pumpkin cookies. They were so moist and tender. I thought they were the best cookies ever…. well, next to plain chocolate chip cookies. The plate of them… looks good to me.

    Anything that is easy to cook or bake is right up my alley. I love that the baking time is less for these because I don’t have a lot of time to bake. My boys love cookies though so it would be great to prepare these quickly and take them with us on-th-go.

    Gram and I made these cookies yesterday. We followed your recipe exactly, let the 2.75 yo boys put in the chocolate chips.They actually watched them baking which is a miracle since they jump,hop, climb, and spin constantly.When the cookies were done they practically inhaled them and we had to force them to save some for their sisters after school snack. We will be making these again and again. Thanks for this easy peasy recipe.

    I love the idea of using box cake mix to make cookies. Not having to cream together butter and sugar makes all the work out of cookie making. Your Pumpkin Chocolate Chip cookies sound perfect for the holidays.

    I made some this weekend for a Halloween party and I used vanilla cake mix instead of spiced. I can to bake them a little longer (28 mins per batch) but they were delicious!

    You rock! I made these for a potluck last night, and there were NONE left! I made them with Enjoy Life chocolate chips (dairy and nut free), so the food allergy mamas could enjoy them too. Definitely a keeper 🙂
