Have fun with these adorable Easter Cupcakes this holiday season.
Ingredients:
Start with your favorite cupcakes, baked, cooled and ready to frost! We used Pillsbury Funfetti box mix.
Swiss Butter Cream Recipe
4 egg whites
1 cup sugar
3 sticks butter, softened
1 tsp vanilla
Frosting Directions:
In a small pan on the stove, mix egg whites and sugar together with a whisk. Using medium to low heat, constantly heat and whisk until the sugar is dissolved and no longer grainy. It may bubble or get foamy and frothy, that’s okay. Remove from heat and let cool.
Place the egg white and sugar mixture in a mixing bowl. Add vanilla. Whisk until it turns white and doubles in size, ours took about 5 minutes.
Add butter to the mixer one stick at a time, beating well after each stick so it is combined. Once all butter is added, whip on medium high speed (we used 8) until a frosting consistency is obtained. Be patient, it took us about 7 minutes to whip it! The process begins with a shiny, almost royal like frosting and then moves into curdled milk, followed by thick ricotta and then all of the sudden you’ll have beautiful butter cream!
Divide your frosting into thirds, one third for the green grass and two thirds for the yellow chicks.
Chick Ingredients:
Wilton Tip 233 for grass and decorator bag
Decorator bag with round opening or you can add a large solid tip to it (Try Wilton 1A)
Wilton Gel Color Lemon Yellow (chick)
Wilton Gel Color Leaf Green (grass)
Wilton Sparkle Gel in Black (eyes)
Orange Chocolate Covered Sunflower Seeds (beak)
Color your small batch of frosting green for grass using green gel color. Place into a piping bag with Wilton Tip 233, set aside.
Color the large batch of frosting yellow for the chicks. Place into a piping bag with a large open end, or use a large solid tip, set aside.
On a clean, flat surface, place cupcakes. Using the green frosting and tip, create a grassy nest under the chick by continuously piping two layers of frosting on the cupcake.
To pipe the chick, press a large dollop of frosting on top of the green grass. Follow with a smaller, dollop, creating a head.
Finish decorating the chicks with two dots of black sparkle gel for eyes and an orange sunflower seed for a beak or an orange jelly bean.
These are best served the day they are made, but store well in the refrigerator overnight until serving.
